I love dishes that I can have on the table in 30 minutes or less!
As a child, I enjoyed having breakfast for dinner when my dad travelled out of town for business. It’s easy to get a delicious breakfast dish on the table quickly on weeknights so I’ve included a couple of frittata recipes. Frittatas are awesome because you can add in so many veggies.
Fish is another great option as it takes usually less than 15 minutes to cook. I keep wild caught frozen filets on hand so I can take them out of the freezer and put in the refrigerator to defrost in the morning before I leave. They’re thawed and ready to cook by the time I get home.
